I think Parmiggiano Reggiano is overstimate as cheese. I like much
more cheese based on sheep's milk : the "pecorino" cheese. There are
excelent pecorino from Sardinia and also very good "pecorino romano",
with much salt: they are so ... rustic cheeses!


I'd like to conclude with a positive statement, but I can't
